The Trouble with Truffles

Captain Kirk had a real problem with tribbles. There were just too many of them. But the trouble with truffles is there’s just never enough!

I love mushrooms, so it’s no surprise that I really like truffles, a subterranean fungi in the Tuber family. Unlike mushrooms, truffles are super expensive and a little jar of truffle salsa or pate gets emptied in a flash.

The soil in Italy is perfect for truffles. For a price, a myriad of truffle products are available. We’re set to try Goccia Nera al Tartufo (balsamic oil with truffles) as well as olive oil with a sliver of a truffle floating around in it.

They use dogs to sniff out truffles. They used to use pigs, but the pigs liked to eat the truffles and at about a grand a handful, the pigs were literally eating a cash cow.
